First, to catch up on yesterday:
These noodles were quite yummy. I added bean sprouts to give them a little extra pizzazz.
I have gotten to where I make homemade granola about once every 2 weeks. Between my mom and I, we normally devour a batch pretty quickly. We finished the usual delicious recipe that I typically make yesterday, so today I thought I would give a new one a try. This is a recipe by Ina Garten from Barefoot Contessa on the Food Network. Her Cherry, Almond, and Cinnamon Granola sounded good and looked simple so I gave this one a try. The only thing is I changed some of it. And by some of it, I mean half of it. Mine was actually Raisins, Blueberries, Pecans and Cinnamon Granola. Lol. But I got the idea from her.

I seriously cannot tell y’all how much a cook and bake. It seems normal to try a couple new recipes a day now and then bake something just because. Needless to say my friends and family have been reaping the benefits of my New Year’s resolution…
The past couple days I’ve made:
– Skinny Taste Chicken Cacciatore
– Turkey Taco Lettuce Wraps
– Strawberry Pie
– Ranch Chicken Tenders
That’s all I can remember.
But I chose a recipe today that I know lots of people like: Cinnabon Cinnamon Rolls. YUM.
Let me tell you though, cinnamon rolls will be the death of me. And not because I eat them all the time and block my arteries with the cream cheese frosting; no, they will be the death of me because I cannot figure out how to get the roll as fluffy as the actual Cinnabon rolls. Ugh. I’ve tried new recipe after new recipe and just have not had luck! They taste delicious, but it’s just not the same roll, you can tell. However, I will say that this is the best frosting and filling that I have come across.

I was so excited after the dough had risen the first time because I thought it was going to be a fluffy roll! Dreams were crushed. But, like I said, they tasted good… just not Cinnabon.
Yesterday’s recipe made me sad. The picture of the baked confection on the blog was so pretty and it looked so yummy and just had great potential; but, it wasn’t so yummy. It was Cinnamon Braid Bread.

Honestly, I thought the hard part would be getting the bread to look like that. That wasn’t hard, the blogger provides good step-by-step pics to achieve this pretty braid. However, the flavor was lacking. I know I am from the South and people down here use way too much butter (and normally I am all for cutting down/out the fat); but y’all. This bread needs alotta butter. I think it calls for 1/2 of a stick and I told my mom next time I was using a whole stick of butter, adding brown sugar, and using less cinnamon. Don’t judge me.
Now for today’s recipe. First off, today I was feeling pretty sick. Like did not want to bake. I figured my blogger friends would understand if I took the day off, so I didn’t sweat it too much.
Then. This evening, around 8 pm, I was on the phone with my boy friend, MM. He asks, “what’d you cook today?” I proceeded to explain that I did not feel well and did not make anything. His response, “so you’re breaking your resolution?”
gosh. when you guilt-trip me like that I guess I have to fix something.

The adorable face I got to wake up to this morning!
Last night I stayed with my sister and my sweet niece; so, this morning we made a yummy breakfast. Carrot. Cake. Waffles. Carrot cake is so delicious. In fact, my Maw Maw makes the best carrot cake in the WORLD. The waffles were definitely nothing compared to her traditional scrumptious cake, but they were pretty good.
And, of course. We had to add cream cheese- carrot cake would not be carrot cake without a cream cheese topping of some sort.

Today I was really craving a hamburger and french fries. As some of you may know, I don’t eat red meat; therefore, I eat turkey burgers or salmon burgers or chicken burgers but not like a real burger. And, to be quite honest it’s not the same. Like no other meat will ever taste as good in a burger as a real hamburger. But, I’m okay with that. I would rather save the calories and the cows.
I have to be honest when I tell you: this Thai Turkey Burger is out of control it is so good. I did not miss the regular old hamburger at all when I was eating this delicious turkey patty. You will notice that the blogger who shared this recipe used ground chicken; I had turkey so that’s what I used. A couple things I want to share that I did differently: make the patties really thin (like 1/2 in); do not be afraid to press the patty down in the skillet after you flip it; the patty has a lot of water that can be released (your burger will not be dry); and, the mixture is kind of “gloopy” as the original blogger states– that is normal, they will be delicious. 🙂

As you can see, I paired my turkey burger with some delicious oven-baked Dill Pickle Fries. If you would have gone out to eat to get this meal you would have racked up a bill and your calorie count for the day. This is a quick, easy, and healthy alternative to a typically not-so-healthy meal. I hope you give this one a try!

Day 44: Tiramisu Cupcakes. Of course, they were delicious. If you like coffee, it’s pretty much guaranteed that you would love this cupcake. It is really light but has bold flavors. The adjustments I made included: using espresso rather than coffee & I used Cool Whip to save some calories rather than heavy whipping cream.
Mmm. Cocoa Pixie Dust.
Day 45: Chipotle Chicken Lettuce Wraps. I don’t have a picture for these little gems but this recipe is a good one! It is on the spicy side if you follow the recipe for the peppers. I used 3 peppers, so if you want it more mild use only 2.
And, today. Day 46.. I think? To be quite honest it’s really hard to keep up with days when I don’t blog daily. Oh well. We are gonna go with the number 46. Anywho, it’s a Whole Wheat Skillet Cookie.

In the effort of trying to conquer my unfortunate texture aversions, this year I am going to try things that I would typically steer clear from.
Exhibit A: the egg.
I never have liked eggs. I think they smell funny, and jiggle funny, and are too bouncy (when scrambled) to be any kind of a good food. However, frittatas have always caught my attention. (That’s when you know that you watch the Food Network too much, you are distracted by a dish called the “frittata.”)

This Light Spinach and Feta Frittata was a crowd pleaser. By “crowd pleaser” I mean my mother and I liked it. I was not at all put off by the fluffy egg texture. In fact, the combination of the onion, feta, spinach, and parm gave the egg mixture a lot of good, complimentary textures & flavors. Last night, we had the Asian chicken with broccoli and oven baked potato wedges. So tonight, I chopped up the left over potato wedges and browned them in a hot skillet to make some delicious hash browns! An excellent crispy side dish to the fluffy frittata.

Happy (almost) Valentine’s Day!
Although I am behind on blogging, I assure you I am not behind on my cooking and baking resolution. I sort of got out of my routine, this past weekend, of documenting my food and blogging. It was not exactly at the top of my priority list, as I was in New Mexico visiting my man.
We made some Jalapeno Cracker things one night… they weren’t too good.
And homemade pancakes were another day… they were much better than the crackers.
gotta love a good pancake.
Sooooo, I’m trying to think of everything I have cooked. That’s just a lot to remember; which is why I should blog each night. Whoops.
Oh, yesterday I made Skinny Taste Baked Jalapeno Popper Chicken (I’m real into the jalapenos here lately). It was quite scrumptious, I must say. Today was another Skinny Taste recipe (i.e., Asian Glazed Chicken). It was super yummy, but kind of salty. Naturally, because of the soy sauce. Next time I will definitely use low-sodium SS. Oh, and I used chicken breasts and the flavor was good. The author mentioned that they become dry easily if you use the breasts; but, she has directions in the beginning narrative portion of the blog for those of us who prefer to use white meat.
I am so excited to bake sweet stuff tomorrow! It’ll be the day before Valentine’s Day & I am going to make fun, sweet treats for my speech kiddos at school. I really want to decorate a shoe box for my Valentines (that I am sure I will not get because no one gives the speech teacher Valentine’s), is that too much? Elementary school fun is getting to me; it’s contagious.

Well, day 36’s recipe was a FAIL. I read the recipe wrong and it was just no good. It was suppppposed to be Cotton Candy Popcorn, mine was just a soupy pink mess because I added too much liquid. But I did try.
Today I redeemed myself though with this Strawberry Shortcake recipe. It. Was. So. Yummy.
My sister- the one who is pregnant with twins- loves strawberry shortcake & she is in town so I made it for her and ze babies.
It probably took me a whopping 5 minutes to make the biscuits, 12 minutes to bake them, and like 2 minutes to eat it. No joke. Such a good recipe & definitely worth trying! One of my favorites of the year.

I have been wanting to try a new salad recipe so I finally decided to do so. This recipe is all inclusive: chicken, salad ingredients, and dressing; a one-stop (filling) supper.
I didn’t change anything in the recipe; however, I did add some sliced strawberries because I had them on hand and thought they would taste good with the vinaigrette.
Yeah, so that’s about it for tonight. lol.
