I am pleased to announce that on Saturday, September 15th, Girl Gone Nom will have a booth at the St. Andrews Waterfront Farmers’ Market!  I will be selling freshly baked Cinnamon Rolls with Cream Cheese Frosting, Cake Pops, and Dewzy’s cookies.  Please come by and show your support as I am trying to expand my baking horizons.  The market starts at 8am and goes till 1pm.

This recipe is super simple and “D’LISH” (as my roommate SK would say).

S’mores Cookies
Makes about 4 dozen cookies

1 1/2 cups all purpose flour

1 cup graham cracker crumbs

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) butter, softened

1/2 cup sugar

1 cup brown sugar

1 teaspoon vanilla extract

2 eggs

2 cups Hershey’s Dark chocolate chips

1 1/2 cups mini marshmallows
Preheat oven to 375 degrees.

In a medium size bowl combine the flour, graham cracker crumbs, baking soda, and salt. Using a hand or stand mixer, beat together the butter, sugar, brown sugar, and vanilla extract until nice and creamy; scrape down the sides of the bowl and mix for another second.  Then, add the eggs one at a time; beating well after each addition.  Add 1/2 of the flour mixture by slowly beating it into the butter mixture until smooth; then, slowly beat in the remaining flour mixture.  Mix well for about 15 seconds.  Finally, stir in the chocolate chips. 

Using about 1 (heaping) tablespoon of batter, scoop the cookie dough out on a cookie sheet, spacing them about two inches apart.  Bake the cookies for 7 minutes, and take them out of the oven.  Then, press 3 or 4 marshmallows into each of the cookies. Return the cookies to the oven and bake an additional 3-4 minutes, or until (almost) fully cooked– we all know that a good cookie is a little underdone.  Cool the cookies on a wire rack, or just eat them while they’re warm with a cold glass of milk!
