Well, hello. It’s been too long.

It’s been a while… a long while, since I have posted anything on my blog.  I may not be keeping to the blogging portion of my New Year’s Resolution but I am most definitely cooking and/or baking something new each day.  It’s actually a problem.  I just found myself pacing back and fourth between my kitchen and pantry, taking out 2 sticks of butter (because every recipe starts with 2 sticks of softened butter), and then browsing Pinterest for today’s recipe.  Even though I have peach cobbler and zucchini bread on the counter, I just can’t get enough of this cooking business.  I am thoroughly convinced that I could try new recipes from Pinterest every single day for the rest of my life.

Part of the reason I have been avoiding the blog is because I just feel like there is so much I need to catch up on so each day I procrastinate a little more…which is really counter productive, but whatever!  If I tried to summarize what I have been doing the past 2 months it would take all day… ain’t nobody got time for that.  So I will just focus on the most important things:

1. Aubrey Grey & Emma Collins made their debut May 29th.  I have the most beautiful nieces.

3.  I’m busy making wedding cakes and birthday cakes and everything else kinda cakes.

I honestly don’t know what new recipe I am going to try today… Maybe cookies, maybe something with strawberries or zucchini, maybe something with Birthday Cake Oreos, who knows.  But, I do know:  a) chances are it’ll be delicious and b) I’ll be packing it up to give away because I do not need anything else here!  I’ll let ya know tho.  It may not be tomorrow.. But eventually!  lol.

The point is- Girl Gone Nom is still nomming away.  In fact, in a couple of weeks I’ll be teaching my first (cup)cake decorating class.  I am thrilled to finally start teaching people how to make delicious food and how to make it look pretty!

Seven.

Hey, it’s me.  So nice to be back, it has been too long.  Although I have held up my New Year’s resolution, for the most part of baking/cooking something new each day, I clearly have not been keeping my blog up-to-date.  And.  I am afraid to inform you that for 31 days I will be taking a break from my resolution and turning my focus to a different challenge.

photo (65)Recently, I have been reading this book, Seven, thanks to a good friend who encouraged me to read it.  It’s all about getting rid of excess; specifically, in seven different areas the author chooses.  The first chapter is food.

Right.  Like, the center of my imaginary, “I’m-a-Food-Network-Star-life.”

Anyways, the author goes on a seven food fast, she only eats seven specific foods that she has picked for 31 days.  Like I said, the whole goal is to eliminate things that you just do not need.  I instantly felt a need to do this fast.  I am in need of needing more of the Lord and less of things, less of me, less of food, less of possessions, less of this world.  So, I’m challenging myself and doing this fast.  I’m not doing it to go on a diet, I’m not doing it to “eat healthy”, I’m not doing it to fulfill the need of “always wanting to be doing something” (as I have already been accused… cough, cough Allison).  I am simply doing this hoping and praying that the Lord will turn a heart that is hungry for Him into a heart that is full.  I do not anticipate that this will be easy, but that is the whole point.  I am radically changing one area of my life so that I can be challenged; and, so that I can be reminded daily, multiple times at that, to seek Him when I feel the need for excess.

So, I’m sure you are all just dying to know what my 7 foods are… Well, here you go:

– Chicken

– Sweet potatoes

– Quinoa

– Greek yogurt

– Apples

– Leafy Greens

– Homemade bread

And, obviously I’ll be staying hydrated with water and 100% (no sugar added) fruit juices.

I’ve never done a fast before, not like this.  But, I figure if I seek less of my world and look more to His, then He will show me something.  I’m not looking for an answer to anything or some big testimony to share with people, I’m just looking for Jesus.

Pray for me friends, I start tomorrow 🙂

 

Day 64: Italian Turkey Meatballs

It was a Skinny Taste night 🙂

This is such a good recipe!  I haven’t posted in a while because I kind of just got in a recipe slump.  I wasn’t making stuff that was super yummy, with the exception of the carrot cake.

For some reason, my mom and my sister always doubt my turkey recipes, even though they have liked each one so far.  I didn’t change this recipe at all and it turned out great.  I served mine over whole wheat pasta but, my mom had hers on a sandwich roll like a meatball sub.  Everyone said it was delicious!  Give this recipe a try… You won’t be disappointed 🙂

Day 59: Scrumptious Carrot Cake

Each holiday, for as long as I can remember, I would HIGHLY look forward to 2 major food groups that my Maw Maw would bring to holiday dinners:  grains and veggies.  Those special treats being fried cornbread and her homemade carrot cake.  TO THIS DAY.. I cannot make fried corn bread like that woman.   She even bought me my own flat, cast iron skillet like hers, but I just don’t have her special touch when it comes to corn bread.  And up to today, I wouldn’t even want to talk about the carrot cake issues.  Not that I’m bitter or anything.

For a few years, when I really started getting into baking, I would ask her for the recipe occasionally and she wouldn’t even really respond.  She would just kind of look at me a smirk.  Lol, thanks Maw Maw.  Y’all, I’m telling you,  it is the best carrot cake… and not just the carrot cake, but the cream cheese frosting.  Nom.  The cake is light (in texture and in color), carroty but not crazy orange, moist, and she always does thin layers.  It’s kind of funny when I was younger, like in middle school and high school, every now and then I’d ask my mom if I could try to make a carrot cake from a random recipe I found (because Maw Maw wouldn’t share) and my mother would literally say, “Pooh, don’t even try.”  HA!  Thanks, Mom.  Of course, I have tried, and my efforts were pointless.  The cakes have been nothing like hers.

Anyway, years go by and last Thanksgiving I thought I’d bat my eye lashes a little more and try to get the recipe again.  And folks— she gave in.  I think she forgot that she had been keeping it from me all of these years.  Do you know what she told me, I will never forget, “It’s just any old carrot cake recipe you’d find in a cookbook.”  I didn’t know if I should be mad or laugh!  Here I am, curiously baking all these years and it’s just any old recipe?!  It’s not like some ancient family recipe passed down from generation to generation?! Lol.  The best part is she told me she uses a recipe (which I am sure she now has memorized and does not reference) from a cook book my mother has, Cooking in the Cove, a local recipe book.  Naturally, I was a bit shocked.  A couple days later I decided to look for the recipe in the book and of course there’s like 5 different carrot cake recipes!

My Maw Maw reads my blogs and today when I had to run down the street to her house to get cinnamon for the cake (thanks again!) I told her what I was making and she smiled.  So Maw Maw, now I hope you really understand how much I want to be able to cook like you.  I love you.  xoxo

The cake turned out good.  I doubt I’ll ever make a carrot cake and be able to say that it turned out great, simply because I’ve had the best.  But, if you’re out there and don’t have a Maw Maw’s carrot cake to compare it to, it’s definitely worth baking :).

Day 58: Homemade Granola

First, to catch up on yesterday:

These noodles were quite yummy.  I added bean sprouts to give them a little extra pizzazz.

I have gotten to where I make homemade granola about once every 2 weeks.  Between my mom and I, we normally devour a batch pretty quickly.  We finished the usual delicious recipe that I typically make yesterday, so today I thought I would give a new one a try.  This is a recipe by Ina Garten from Barefoot Contessa on the Food Network.  Her Cherry, Almond, and Cinnamon Granola sounded good and looked simple so I gave this one a try.  The only thing is I changed some of it.  And by some of it, I mean half of it.  Mine was actually Raisins, Blueberries, Pecans and Cinnamon Granola.  Lol.  But I got the idea from her.

Cinnabon Cinnamon Rolls

I seriously cannot tell y’all how much a cook and bake.  It seems normal to try a couple new recipes a day now and then bake something just because.  Needless to say my friends and family have been reaping the benefits of my New Year’s resolution…

The past couple days I’ve made:

– Skinny Taste Chicken Cacciatore

– Dewzy’s

– Turkey Taco Lettuce Wraps

– Strawberry Pie

– Ranch Chicken Tenders

That’s all I can remember.

But I chose a recipe today that I know lots of people like: Cinnabon Cinnamon Rolls.  YUM.

Let me tell you though, cinnamon rolls will be the death of me.  And not because I eat them all the time and block my arteries with the cream cheese frosting; no, they will be the death of me because I cannot figure out how to get the roll as fluffy as the actual Cinnabon rolls.  Ugh.  I’ve tried new recipe after new recipe and just have not had luck!  They taste delicious, but it’s just not the same roll, you can tell.  However, I will say that this is the best frosting and filling that I have come across.

I was so excited after the dough had risen the first time because I thought it was going to be a fluffy roll!  Dreams were crushed.  But, like I said, they tasted good… just not Cinnabon.

Day 49&50

Yesterday’s recipe made me sad.  The picture of the baked confection on the blog was so pretty and it looked so yummy and just had great potential; but, it wasn’t so yummy.  It was Cinnamon Braid Bread.

Honestly, I thought the hard part would be getting the bread to look like that.  That wasn’t hard, the blogger provides good step-by-step pics to achieve this pretty braid.  However, the flavor was lacking.  I know I am from the South and people down here use way too much butter (and normally I am all for cutting down/out the fat);  but y’all.  This bread needs alotta butter.  I think it calls for 1/2 of a stick and I told my mom next time I was using a whole stick of butter, adding brown sugar, and using less cinnamon.  Don’t judge me.

Now for today’s recipe.  First off, today I was feeling pretty sick.  Like did not want to bake.  I figured my blogger friends would understand if I took the day off, so I didn’t sweat it too much.

Then.  This evening, around 8 pm, I was on the phone with my boy friend, MM.  He asks, “what’d you cook today?”  I proceeded to explain that I did not feel well and did not make anything.  His response, “so you’re breaking your resolution?”

gosh.  when you guilt-trip me like that I guess I have to fix something.

Day 48: Carrot Cake Waffles

Last night I stayed with my sister and my sweet niece; so, this morning we made a yummy breakfast.  Carrot. Cake. Waffles.   Carrot cake is so delicious.  In fact, my Maw Maw makes the best carrot cake in the WORLD.  The waffles were definitely nothing compared to her traditional scrumptious cake, but they were pretty good.

And, of course.  We had to add cream cheese-  carrot cake would not be carrot cake without a cream cheese topping of some sort.

Day 47: Thai Turkey Burgers

Today I was really craving a hamburger and french fries.  As some of you may know, I don’t eat red meat; therefore, I eat turkey burgers or salmon burgers or chicken burgers but not like a real burger.  And, to be quite honest it’s not the same.  Like no other meat will ever taste as good in a burger as a real hamburger.  But, I’m okay with that.  I would rather save the calories and the cows.

I have to be honest when I tell you:  this Thai Turkey Burger is out of control it is so good.  I did not miss the regular old hamburger at all when I was eating this delicious turkey patty.  You will notice that the blogger who shared this recipe used ground chicken; I had turkey so that’s what I used.  A couple things I want to share that I did differently:  make the patties really thin (like 1/2 in); do not be afraid to press the patty down in the skillet after you flip it; the patty has a lot of water that can be released (your burger will not be dry); and, the mixture is kind of “gloopy” as the original blogger states– that is normal, they will be delicious.  🙂ahhhh.  so yummy.

As you can see, I paired my turkey burger with some delicious oven-baked Dill Pickle Fries.  If you would have gone out to eat to get this meal you would have racked up a bill and your calorie count for the day.  This is a quick, easy, and healthy alternative to a typically not-so-healthy meal.  I hope you give this one a try!

Day 46: Whole Wheat Skillet Cookie

Day 44: Tiramisu Cupcakes.  Of course, they were delicious.  If you like coffee, it’s pretty much guaranteed that you would love this cupcake.  It is really light but has bold flavors.  The adjustments I made included:  using espresso rather than coffee & I used Cool Whip to save some calories rather than heavy whipping cream.

Day 45:  Chipotle Chicken Lettuce Wraps.  I don’t have a picture for these little gems but this recipe is a good one!  It is on the spicy side if you follow the recipe for the peppers.  I used 3 peppers, so if you want it more mild use only 2.

And, today.  Day 46.. I think?  To be quite honest it’s really hard to keep up with days when I don’t blog daily.  Oh well.  We are gonna go with the number 46.  Anywho, it’s a Whole Wheat Skillet Cookie.
